Celebrate Matariki with This French Toast

French Toast
- 10 slices whole meal bread
- 2 large eggs
- ½ cup whole milk
- 1 tsp vanilla extract
- ¼ teaspoon salt
- 1 tsp brown sugar or natural sweetener
- 2 cups cornflakes, roughly crushed
- Canola oil spray or butter
Toppings
- 120g cream cheese, soften at room temp
- 50ml evaporated milk
- 2 tbsp brown sugar or natural sweetener
- ½ cup blueberries, roughly blended
- Fresh or frozen blueberries & boysenberries
- Star sprinkles
How To Do It
- In a medium bowl, whisk together the eggs, milk, vanilla extract, salt and sugar.
Use a round cookie cutter or cake mould (around 8 – 10 cm) to press on whole meal bread & make round pieces. Don’t worry about wastage. You can save these bread offcuts for egg in a whole toast.
- Soak the round bread, one at a time, in egg mixture until bread has absorbed all liquid. Crumble with crushed cornflakes until both sides are covered.
- Heat a large non-stick pan over medium heat and spray with canola oil or 2 tbsp butter if using. When the pan is hot, place the cornflake coated breads onto the hot surface.
- Cook about 3-4 minutes on each side, until the cornflakes are browned, and the toast is cooked. Cook all slices and let them rest for a few minutes.
- In a small bowl, whip cream cheese until light & fluffy. Add a little bit of evaporated milk until you’re happy with the texture. Follow by blended blueberries and mix until all is combined.
- Place round French toast on a plate. Dollop a good amount of blueberries crème cheese on top and follow by another toast. Repeat with another 2 or 3 bread pieces. Finish off with the berries, star sprinkles and pour some evaporated milk on top. Enjoy~
